Blaze Young’s career trajectory took a transformative turn when she transitioned from law to the culinary arts, culminating in the opening of Nieuw Ruin at 29. Her culinary journey, honed through roles at Propeller, Billie H, Lions & Tigers, Si Paradiso and Madalena’s, allowed Young to refine her craft and gain industry recognition, including the WA Good Food Guide’s Breakthrough Talent award.
This success naturally led to her appointment as Head Chef at Nieuw Ruin, which quickly became a standout in Fremantle’s dining scene. Young’s achievements were further acknowledged with the 2023 WA Good Food Guide Young Chef of the Year title, as well as the WA Bar Awards Chef of the Year accolades in both 2022 and 2023.
In addition to her role at Nieuw Ruin, Young expanded her influence within the industry as Executive Chef at Foxtrot Hospitality’s third venue, Edward & Ida’s, which launched in 2023. She now oversees the culinary programs across three dynamic kitchens, including Nieuw Ruin, Edward & Ida’s, and Foxtrot Unicorn, leading the food direction for the entire group.
