After more than 40 years of shucking oysters around the world, Jerry Fraser has well and truly earned his title as “Perth’s Oyster King.” A master of his craft and a born entertainer, Jerry brings theatre, finesse, and infectious energy to every shell he opens.
He honed his skills at London’s iconic Bentley’s Oyster Bar, serving everyone from rockstars to royalty — including Prince Charles and Princess Diana. Since relocating to Western Australia, he’s become a beloved fixture in the state’s dining and festival scene, having shucked millions of oysters across restaurants, events, and open-air celebrations.
Part skilled artisan, part charismatic host, Jerry turns every oyster tasting into a performance — complete with banter, tips, and the occasional sparkling toast.
He’s a passionate champion of local, sustainable produce, especially proud to serve Albany Rock Oysters from the Great Southern. Ask him for the perfect pairing, and he’ll point you to a splash of lemon or a chilled glass of Great Southern riesling.
